A Special Breakfast without the stress

Make Breakfast the Night Before a Big Day!

Getting out the door on time, whether for church or for family functions, can add to the holiday stress.  I just tried a dairyfree/egg free/ soyfree recipe that everyone can enjoy.  It was great, and I would like to share it with you.   If you can have dairy,  you can add sliced cream cheese (about 8oz.) between the two layers of bread and whipping cream on top.  A wonderfully special breakfast without the stress.  Now, you can just concentrate on enjoying your family during the up and coming Christmas holiday.

Overnight Berry French Toast:
12 thick slices of Bread
1 cup raspberries or blue berries
12 eggs
2 cups milk or almond milk
1 Tbsp cinnamon
1/4 cup raw sugar
20 drops vanilla stevia
1 cup raspberries or blue berries
1 cup water
2 Tbsp corn starch
3/4 cup raw sugar
10 drops vanilla stevia

Place 6 thick slices of bread flat on the bottom of a greased baking pan.  Sprinkle 1 cup of raspberries on top of the bread.  Place the 6 remaining slices of bread on top of the bread in the pan.  Mix the eggs, milk (or almond milk), cinnamon, 20 drops vanilla stevia, and 1/4 cup raw sugar in a bowl.  Pour the mixture over the bread in the pan.  Cover with tin foil and place the pan in the refrigerator overnight.  The next morning, bake the french toast on 350 for 30 min. covered and 30 min. uncovered.  The last 30 mins, make the sauce.  Mix 1 cup raspberries, 1 cup water, corn starch, 3/4 cup raw sugar and 10 drops vanilla stevia in a pot while cold.  Turn on the heat to med. high.  Stir continually until it boils and thickens.  Remove from heat.  Pour over the top of the french toast and serve.  (Add whip cream or thick coconut milk on top of the french toast.)
