Coco-nut Non-dairy Ice Cream
This is the most delicious Ice cream, and amazingly, it is made with no dairy, no eggs, no gluten and no sugar. I used agave to sweeten it, coconut milk to make it creamy, and soaked cashew nuts to thicken it. I adapted this recipe from a “raw food website,” though I don’t remember which one right now. They used an organic young coconut. I needed ice cream to be easier and cheaper. I replaced the fresh young coconut with a can of organic coconut milk (full fat). The resulting master piece is a creamy chocolate ice cream that tastes like a candy bar. Yum…….
- Soak 1 cup raw cashews at least over night
- 1 can full fat organic coconut milk
- 1/2 cup agave
- 1/4 cup coconut oil
- 1 Tbsp vanilla
- 3 Tbsp Organic cocoa powder
- 1/2 tsp Sweet Leaf stevia powder
Blend all ingredients until smooth. Pour into an ice cream maker.

This Cuisiart is a wonderful quick and easy, always ready, ice cream maker. I totally love the red, but the most important part of this machine is that it is always ready to go. Store the bowl in the freezer. When you want to make ice cream, just take the bowl out of the freezer, pour in your blended ingredients, and turn the machine on.
The Best way to blend this delicious creaminess is to use a high powered blender. I bought mine 11 years ago and it is still going strong. Before I bought my Vitamix, I would go through at least one 100 dollar blender each year. I have made tomato sauce, baby food, thick smoothies, Mango sorbet, nut butters and Non dairy Ice cream. It blends it professionally smooth and creamy. It is highly recommended.
